Scary “Eyeball” Appetizers

What to do when the school you’re volunteering for, says “Fruit and Veggies” only for Halloween?
Here’s something my son and I had fun assembling. They’re “eyeballs” -carrot chunks topped with organic cream cheese and a sliver of black olive.
We used regular carrots (not baby ones) and sliced them about 1/4 to 1/2 inch thick. Spread each with a dollop of cream cheese and top with the black olive slice.
Easy, and fun to make.
We know it’s not a sweet- but they are tasty.

LOVE this eyeball recipe, Holly! Ironically, they’re a bonus for eye health thanks to the carrots’ rich source of vitamin A.
