Guest Blogger: Jennifer Elsner’s Granola
Jennifer is a designer extraordinaire, with so much talent it just blows me away. (Her studio, Viewers Like You, created my website.) Jen is also a lover of healthy, easy-to-make, delicious food. Knowing her as I do, it’s no surprise that she took a recipe created by her close friend, and blogger-chef, Elizabeth Winslow, and added elegant twists.
Ingredients
1 vanilla bean, split open lengthwise, seeds and paste scraped out
1/2 teaspoon ground cardamom
1 cup maple syrup
8 cup rolled oats
1/2 cup sesame seeds
1/2 cup pumpkin seeds
1/2 cup shaved coconut
1 cup pecan halves
2 tablespoon grape seed or other neutral oil
Pinch of sea salt
Preparation
1. Preheat the oven to 325° F.
2. In a large bowl, combine oats, seeds, pecans, a pinch of salt, and syrup.
3. Spread out on a large baking sheet lined parchment paper and bake for 25 minutes, stirring every 10 minutes or so, until golden brown and toasty.
4. Cool the granola on the sheet and store in an airtight container.
Serve with almond milk (homemade of course!) and chopped fresh apples.
