Spring Pink Smoothie: Beet, Strawberry, and Ginger

 
Enjoy this seasonal smoothie made with tender beets and the first berries of spring.

I’m crazy for the pink color, and sometimes I just make it to admire it’s beauty. Seriously.

It makes me happy. 🙂

Ingredients:
1 cup coconut water
1 cup strawberries (must be organic), trimmed
1 medium beet, roughly chopped
1 lemon, peeled
2 stalks celery
1 tablespoon coconut oil
1/4 inch fresh ginger
sprig of mint for garnish

Preparation:
Add all ingredients to the high speed blender and blend. (I used a Vitamix for this)
