I love pesto as a topping for almost anything, especially when it’s a little bit unique. This one is my new favorite.
Ingredients
1 cup fresh mint
1/4 cup Happy Hemp seeds, raw
1/4 cup raw pistachios, shelled
1/4 cup olive oil
1 small garlic clove, peeled
1/2 lemon, juiced
1/2 teaspoon sea salt
Preparation
1. Pulse all ingredients in a food processor or Vitamix until well combined.
Enjoy on grilled fish, stuffed peppers, veggie pasta, gluten free pizza, on top of fresh tomatoes, and more.
