Sweet Potato Fries

Did you know that sweet root vegetables like carrots, sweet potatoes and butternut squash are not only high in vitamin A and beta carotene ( think gorgeous skin!) but also a great way to keep cravings at bay? They’re high in natural sugars- the good kind that slowly elevate your blood sugar to keep you from wanting refined processed sugars later. I often recommend increasing root vegetables to my clients that suffer from sugar cravings.
This secret really works.

Here’s a recipe for one of my favorite and easy ways to enjoy a delicious sweet potato. This recipe works just as well for white potatoes or carrots.

Sweet Potato Fries

2-3 large sweet potatoes (and/or carrots or white potatoes)
olive oil
sea salt
cinnamon optional (for sweet potatoes or carrots)
Grade B maple syrup

Peel potatoes or carrots and slice into long strips. Place in a mixing bowl and toss with enough olive oil and sea salt to coat. You can add cinnamon for an even sweeter treat.
Spread onto a baking sheet and place in a pre-heated oven at 350° F.
Roast until golden brown, times will vary. Turn once if you are able to without breaking.
Dip in maple syrup for a healthy sweet treat. (Genuine maple syrup is high in minerals.)
