Kale Chips

Kale is the “King” of vegetables, loaded with deep green antioxidants, protein, calcium, magnesium and Vitamin K. These chips are an easy and delicious way to get your kale in, and so delicious that in my house they rarely make it off the stove! They are low in calories, high in fiber and a big nutrition bang for the buck.

Preparation

1. Preheat oven to 375° F.

2. Remove kale from stalk, leaving the greens in large pieces.

3. Using a large bowl, add torn kale pieces and sprinkle with olive oil. Massage the kale to cover it evenly. Add sea salt if desired, and some cayenne pepper for a spicy version.

4. Lay kale out of a baking sheet and bake for 5-10 minutes. Times will vary depending on your oven and kale can burn easily. When you see kale crisp, it’s ready. Turn if needed.
