Healthy Road Trips
Do you spend way too much time in your car, traveling to appointments, or driving an SUV full of kids?
Here are some ideas on how to eat well on the road, with or without kids in your car.
1) Smoothies
for easy- to- drink protein and instant energy- blend one of these and fill your water bottle.
Strawberry Milk Shake
6-8 oz almond milk
1 frozen banana
1 scoop hemp protein
1 cup strawberries
1 tbsp coconut
or 2 dates, pitted, optional
Blend all ingredients in high speed blender.
Tropical Smoothie
6-8 oz coconut water
1 cup strawberries
1/2 cup mango
1 frozen banana
Blend all ingredients in high speed blender
2) Energy Bars
These snack bars are super simple to make.. And really delish. Try them as bars, or roll them as balls.
Date Nut Energy Bars
3/4 cup of each of the following ingredients.
dates, pitted
oats
dried cranberries or dried fruit of choice
coconut
walnuts
dark chocolate chips, (I prefer raw cacao chocolate nibs)
coconut syrup
Add dates to food processor and puree. Add remaining ingredients and blend briefly so chunky.
Roll into balls or mold into a pan or baking dish. Chill and cut into bars.
3) Berry Bowls
Crudite or fresh fruit is so refreshing when you take time to wash and put it into a convenient bowl for the car. This is an easy snack to grab while driving and not messy. 🙂
Veg’ bowl
baby carrots and grape tomatoes
Fruit bowl
seedless grapes and kumquats::)
4) Wrapped Spiral Sandwich
Layer a Nutritional Style favorite, zucchini hummus with alfalfa sprouts and roll like a pinwheel in an organic wrap.
This works really well for almond butter and all- fruit spread too- kids love it!
