Persimmon Cashew Smoothie
Persimmons earned a spot on my Winter Superfoods list, for good reason. They’re high in vitamins C and A, as well as beta carotene and heart-healthy lycopene. Persimmons also contain manganese, iron, and calcium. Just be sure they’re ripe, otherwise they’re fuzzy and bitter in your mouth (a great test: if the green tip pulls off easily, it’s ripe).
Add some creamy almond milk and cashews, warm it up with cinnamon, and you’ll have the perfect warming winter smoothie.
Ingredients:
1 cup almond or coconut milk
1/4 cup raw cashews
1 persimmon
1/4 teaspoon cinnamon
1/4 inch raw ginger
2 pitted medjool dates
optional: green it up with a handful of baby spinach
Preparation:
1. Blend all ingredients in a high speed blender until smooth.
