Guest Blogger: Jennifer Mielke’s Roasted Chicken and Carrots with Olives
Every Healthy Omnivore I know loves a good chicken dish, and this one is no exception. It’s unique, and approved even for my current Cleanse with Benefits group.
 
Jennifer Mielke, the Health Coach for Eleven Eleven Wellness in New York City. She adapted this recipe for her family from Martha Stewart’s Real Simple Magazine.
Preparation:
1. Mix sauce ingredients and whisk.
2. Pour over chicken. Flip and repeat.
3. Pour over carrots and olives.
4. Cover, cook for 30 minutes.
5. Uncover, and cook for 15 minutes more.
