Watermelon-Strawberry Lassi
As I was cutting a ripe watermelon today, and continued to carve the sweet melon from it’s rind (and carve and carve and carve…), I realized that I was going to need to find more ways to use it. It was huge.
Do you know the saying “inspiration is born from necessity”? Well, my husband reminded me of our trip to India, where my son drank Watermelon Lassi every day. I think that was all he ate for weeks, since he didn’t love the spices. Ta-da! I got right to work.
Traditional Lassi contains yogurt, and since we’re a dairy free household, I re-created this sweet and refreshing treat using coconut milk.
I think almond milk would work just as well. I had fresh strawberries that I’d frozen the other day, and just a cup turned this pink drink into a slushy treat.
Below is for 1 serving. But I have a LOT of watermelon left, so now that my recipe testing has resulted in success, I’ll be doubling (and doubling and doubling) the ingredients to fill a pitcher’s worth.
Ingredients
2 cups cubed fresh watermelon
1 cup frozen strawberries
1/4 cup fresh almond or coconut milk
Juice of 1 lime
20 or so fresh mint leaves
Preparation
Blend on low in high-speed blender, or use a hand blender until creamy smooth.
