Chocolate Banana Quinoa
My son was iffy on quinoa until I began adding chocolate and banana to it (surprise, right?). Now this is one of his favorite breakfasts.
Quinoa provides a balanced protein and extra energy for the morning hours. This super-seed has all the amino acids your body requires, without the heavy feeling some other grains give.
You can top this delicious morning treat with additional coconut milk or any non-dairy milk of your choice for a creamier taste. It’s just the thing for wowing your out of town visitors or a house full of kids!
Ingredients
1 cup almond, hemp, or coconut milk
1/2 cup water
1/2 cup raw quinoa
sea salt to taste
1 banana, sliced
2 teaspoon coconut sugar
2 teaspoon raw cacao powder
1/2 teaspoon vanilla extract
dash ground cinnamon
Preparation
1. Combine the almond, hemp, or coconut milk with the water in a saucepan. Bring to a boil and stir in the quinoa and sea salt to taste. Reduce the heat to low, cover, and simmer 8 to 10 minutes, or until the liquid is absorbed. Stir occasionally.
2. Put the cooked quinoa into a mixing bowl. Add the banana slices (save a few for garnish), the coconut sugar, cacao powder, vanilla, and cinnamon. Stir well, mashing in the banana.
3. Divide between 2 individual serving bowls and garnish with banana slices.
