Greta’s Roasted Peppers

 
Recently, I visited friends in Croton on Hudson, New York, at their lovely Airbnb estate, along with a large group of our teen age boys and friends.

Meals were a combined effort by all the moms present, and happily, there was some natural talent around the kitchen counter.

My friend, Greta, grabbed a large container of organic small peppers from the fridge, (the kind I usually snack on like popcorn, raw) and within seconds she had created this gorgeous and easy side dish.

Of course, I grabbed my iphone to photograph it, and share with you.

I watched her toss them onto an old baking tray, sprinkle them with a dash of EVOO and seasoning, and then I realized that I had really been missing out. Within minutes she placed them in the oven, and we had a colorful dish to serve up to all those boys.

Here’s an easy way to roast peppers for dinner, or to use later for sandwich or salad toppings.

1. Preheat the oven to 350°.
2. Rinse peppers and spread them on a baking sheet.
3. Sprinkle extra virgin olive oil over the peppers.
4. Season with a little bit of sea salt and black pepper if you like.
5. Place peppers in the oven.
6. Remove from heat once they begin to blister.
7. Serve in a bowl or platter.
