Mediterranean Quinoa
It takes a village, don’t you think? My friends and I have been talking about the importance of community lately and how grateful we are to have ours.
Having good friends will keep you happier, offer support when things go wrong, and of course it’s invaluable when you’re raising kids. Coming together for meals has always been our way of gathering our boys, and with the holidays coming up, this quinoa dish is on my agenda.
My good friend, Professor Lively, (at least that’s what the boys call her:) visited us recently at the farm, and this is her recipe.
Ingredients
1 cup red quinoa
1 red pepper, diced
12 oz. cooked chickpeas
20 mint leaves, sliced as ribbons
6 scallions, diced
6 cloves garlic, minced
1/4 cup extra virgin olive oil
1/4 cup lemon and lime juice (equal parts)
1 teaspoon sea salt
1/2 pint cherry tomatoes, sliced in half lengthwise
1/4 cup parsley, minced
Preparation
1. Whisk olive oil and citrus juice with minced garlic and sea salt.
2. Cook quinoa according to package directions, allow to cool.
3. Blend dressing into quinoa.
4. Add all other ingredients and gently blend

This morning I ate roll with light butter..
But tonight I had swai witha bread stuffing, string beans (grilled) and tabouleh (quinoa) which I love.
I’m not that creative though. I used a mix of red and white quinio, tomato, cucumber, scallions, mint, parsley, a little olive oil and lemon. I’m addicted to it! 🙂
I’ll have to try your recipe. Sounds good.
