Holli’s Heart Love Salad

Ingredients
2 bunches arugula
1 bunch mache lettuce
1/3 cup thinly sliced red onions
1 whole lemon, juiced
1 large watermelon radish or 5 small regular radishes
1-2 medium red or golden beets or ½ package of pre-packaged beets (LOVE beets is our favorite)
1/4 cup walnuts
1 red delicious apple
1 teaspoon extra virgin olive oil (optional)
pinch of Himalayan sea salt (optional)
Preparation
1. Thinly slice ¼ small red onion and radishes.
2. Sprinkle with ½ the juice of the fresh lemon and a pinch of salt. Set aside for 10-15 minutes at room temperature.
3. Prepare your bed of greens in a large salad bowl or serving dish.
4. Slice steamed beets and place atop the greens.
5. Dice apple and sprinkle onto salad.
6. Squeeze remaining lemon juice onto salad.
7. Top with walnuts, red onions and radishes.
8. Drizzle with olive oil and a final pinch of sea salt for added flavor (optional).
If you’re relaxing with girlfriends or your significant other on a cold winter’s night, sprinkle with raw goat cheese and pair with an organic, sulfite free glass of red wine.
