Lentil Love
Lentils do the body good, especially the heart. With the highest levels of protein of any plant — as much as 35% — these pulses pack a powerful punch. Often compared to meat for their similar health benefits, the low levels of fat in lentils make them incredible for heart health.
Easier to digest than most beans and a superb source of fiber and phytonutrients, this heart healthy hummus will quickly become a favorite.
Ingredients
1 cup of lentils
1 bay leaf
1-2 tablespoons of tahini (we prefer raw, but roasted is fabulous too)
2-3 cloves garlic
2 cups water, vegetable or chicken broth (or a combination; water alone works great)
3 tablespoons extra virgin olive oil (add more depending on desired creaminess)
1 teaspoons himalayan or celtic sea salt
Handful of basil
Preparation
1. Soak lentils overnight if possible.
2. Add 2 cups of water or broth to large saucepan and bring to a boil.
3. Add lentils and bay leaf and bring flame down to to low heat.
4. Let simmer for 10 minutes stirring occasionally.
5. Add himalayan sea salt and remaining liquid if needed and continue to cook for 10-20 minutes. The lentils are done when most of the liquid has been absorbed.
5. Let cool for 10 minutes and transfer lentils and remaining liquid to Vitamix or standard food processor. They may still be warm, which is a good thing!
6. Add tahini, olive oil, basil and garlic and process until smooth.
7. Sprinkle with sea salt and serve with your favorite crackers (we like Mary’s gluten free, rice crackers or pita crisps) and a tray of freshly sliced veggies.
Note: Some prefer their garlic to be roasted or steamed before adding to a dip or hummus. If this is you or your guests, roast the garlic ahead of time or add it to the lentils while cooking.
