Berry Chia Beauty Pudding

I’ve been talking about running, lately, on my Instagram feed. You know… showing my sneakers..an ankle injury….my favorite ways to hydrate following…But my nutrition has some needed extra support, too.

I’ve turned to essential fatty acids (EFA’s) for extra joint support, and chia, that super seed from the south fits the bill. Not only is chia high in protein, but it’s complex profile makes this pudding my recent go-to breakfast.

Ingredients:
5 tbsp chia seeds
1 3/4 cup coconut milk
1 cup fresh or frozen berries of choice; plus 1/2 cup fresh berries for garnish
1-2 tsp maple syrup

Preparation:
1. Mix the chia seeds with the 1 1/2 cups of coconut milk for 2 minutes. Pour the mixture into 4 round dessert or pudding molds or ramekins (about 4 inches in diameter) or a selection of mason jars in smaller sizes. We prefer the round lids. Refrigerate for 3 hours or until completely set.
2. Puree the fruit of your choice with remaining coconut milk until its reached your desired consistency.
3. Place the fruit in a small saucepan with the maple syrup. Bring to a boil over medium heat, then immediately reduce the heat to very low and cook gently for about 5 minutes or until the sauce coats the back of the spoon.
4. Remove the puddings from the fridge. Drizzle with the fruit sauce and serve with your choice of fresh berries.
