Bitter Melon Juice for Beauty

 
I bought a Bitter Melon at the market the other day, after reading about how incredibly nourishing this unusual looking this veggie is. I decided that I needed to figure out some way to juice it; bitter melon taste and all.

You know I love my green juice, daily, but this super-charged melon was calling out to me, it’s been a busy month and my Nutritional Style needed more oomph.

Bitter melons are dense with precious nutrients; an excellent source of vitamins B1, B2, and B3, C, magnesium, folate, zinc, phosphorus, manganese. They’re also rich in iron, with double the beta-carotene of broccoli, the calcium of spinach, and potassium of a banana. Hello!

Note: A little goes a long way. This is an occasional, not an everyday elixir (taste it and you will know why!)

Ingredients
(All organic, with seeds and skins in tact)
1 fresh Bitter Melon
1 medium cucumber (reserve a few slices of cucumber for garnish)
1 small head of romaine lettuce
Juice of 1-2 fresh lemons (skin off if not organic)
Fresh mint for garnish if desired
Optional: Stevia

Preparation
Add ingredients to juicer, in order listed
Add Stevia if needed
Best chilled or with a few ice cubes
Garnish with cucumber slices, fresh mint
