Client Recipe // Nutritional Style Approved February: Flourless Pancakes Jennifer Elsner Healthy Omnivore + Creative Director Richmond, VA Ingredients 1 ripe banana 2 eggs Coconut oil for the pan Optional: Shredded Coconut, Flax/Chia Seeds, Vanilla, Cinnamon or Cadamom. Directions Mash ripe banana in a bowl until creamy. Thoroughly mix eggs into banana puree to create batter [you can also use an immersion blender ]. Add desired additions. Heat pan on low-medium heat and add oil. Add batter [ silver dollar-sized ] into pan. Raise heat to medium-high, let pancake set until center bubbles & gently flip. Enjoy with berries and maple syrup. { Serves 2 }

Not all of us are born triathletes, and if you’re the type who has a built in resistance around exercise or movement in general, this one’s for you. The spring weather can make you want to get going, but you might not know where to begin. Healthy Egg Nog

I LOVE egg nog, but I’m afraid the high fat diary version doesn’t love me back. It makes me sick to my tummy.  It also makes me feel bloated. I had to design my own healthy version, using my beloved almond milk and my favorite sweet spices. It’s awesome, and kids love it too.. so do husbands. Ingredients 2 cups almond milk (homemade is best!) 1 frozen banana ( you can add a second one if you’re OK with the extra banana sugar) 1 teaspoon vanilla Big dashes of cinnamon and nutmeg, including some to garnish 3 Medjool dates, pitted Preparation Blend in a high speed blender and serve with a cinnamon stick.  Sprinkle with a cinnamon shake! Serves 2  

What to eat the day after Thanksgiving

Welcome to the day after Thanksgiving. I hope you had a wonderful day, full of love, and light, and joy. I hope you had a true holiday, that you relaxed with friends and family, and that you gave thanks for your blessings. Now on to today. If you overdid it, first of all, that’s ok. You’re forgiven by the universal laws of healthy eating. Get over it and move on. Now what to do.. Even if you only ate slightly more than usual, these tips will help you out too. 1) DON’T starve yourself. This is not the day to go without eating all day. This is not the ideal day for a JUICE FAST, or to begin a cleanse. You have to eat today to keep your metabolism burning yesterday’s meal. 2) DO eat lots of vegetables to keep your digestion moving, and your energy up. Vegetables will also help cleanse your system of the heavy fats and sugars that you may have eaten yesterday. A green smoothie or a green juice is a great idea, but eat solid food during the day as well. Add in a salad for lunch and dinner if you can, or roasted root…

Survival Tips for Turkey Day

Need some tips to get you through the big turkey day? Contrary to what you might wish for, your family and friends will most likely not be serving grilled veggies, plain, vegan turkey, and “raw” pumpkin pie. Food is about to take center stage, and old family recipes and labor-intensive preparation will win the day; the creamier, the thicker and the more “breadie” the better. How to make it through without having to loosen your belt or bloat up the next day? Here are my best survival tips: – Eat your normal meals during the day. This will help you avoid extreme hunger later and the feeling that you “saved up” and are entitled to overeat. -Avoid large portions of the creamy, cheesy, and breadie side dishes, but have a bite or two if you need to. Or pick one of the above to indulge in. This will help avoid the feeling that you “missed out”, and who wants that on Thanksgiving? – Stick to lean turkey, and use as little gravy as possible.
