The Ultimate Date Night Veggie Burger

 

It can be challenging to agree on a shared meal with your significant other – especially when you eat clean, whole foods and they’re a fan of anything deep fried. Not anymore.

My friends at Sakara Life have created a delectable veggie burger and beet chip recipe that you, and your love, will be crazy for. Not to mention any kids that may wander in.

Burgers

Ingredients:

1 medium sweet potato, baked and peeled
16 oz. cooked white beans (bpa free canned, drained and rinsed for soak them yourself)
1/2 cup white onion, chopped
2 tbsp tahini
3/4 tsp apple cider vinegar
1/2 tsp salt
1/4 tsp black pepper
wild oats, ground to 1/3 cup oat flour
1 cup spinach, finely chopped
1/2 cup cilantro, finely chopped
1/4 cup fresh basil leaves, finely chopped
2 garlic cloves, minced
2 tsps ginger, grated finely
1/2 tbsp sesame seed oil
1 tsp lime juice
1/2 tsp ground coriander
½ tsp cumin

Preparation:

1. Bake sweet potato at 400 for 40-60 minutes – until tender.

2. Rinse white beans under warm water.

3. Once the potato is done (keep the oven on, you’ll need it later), discard the skins and mash potato into a large mixing bowl with the beans.

4. Fold in the onion and keep on mashing.

5. Add all remaining ingredients and mash until well combined.

6. Form the burger mixture into large patties.

7. Heat a skillet over high heat, add coconut oil and then add burger patty when oil is hot.

8. Cook for 2 minutes on each side (until slightly brown). Repeat with the remaining burger mixture, for freeze for later use.

9. Place the burgers on a baking sheet and bake for 10-15 minutes, until cooked through.

Serve burgers on a sprouted grain bun, and garnish with your choice of avocado, ketchup, mustard, lettuce, onion, or fermented veggies.

*This serves 5-6

Beet Chips
Ingredients:
2 pounds of large beets, peeled
2 tbsp olive oil
sea salt
freshly cracked black pepper

Preparation:

1. Preheat the oven to 350 and line one or two baking sheets with parchment paper.

2. Using a mandolin, thinly slice beets. If you do not have a mandolin, slice

the beets as thinly as you can.

3. In a large bowl, toss beet slices with olive oil to coat.

4. Arrange your sliced beets on baking sheets without overcrowding.

5. Bake until crisp, about 25-30 minutes, rotating pans once halfway through baking.

6. Cool the chips and blot with paper towels to remove any excess oil.

7. Toss beet chips with sea salt and pepper.

*Beets cause an increase in nitric acid, helping to dilate blood vessels and encourage blood flow. They’re also great for endurance.
