EASIEST Snack Bars
These snack bars are raw, vegan, and super healthy.
They’re also the easiest bars to make.
Whip up a batch of EASIEST Snack Bars this week and watch them disappear!.
Ingredients
2 cups raw cashews
2 cups pitted medjool dates
Optional additions:
–2 tablespoons lemon juice and 1 tbsp lemon zest
–2 tablespoons raw cacao and cacao nibs
–2 tablespoons lemon juice and 1/4 cup dried cranberries
–1/4 cup flax seeds, hemp seeds or chia seeds
–1/4 cup raisins
–1 cup cashews and 1 cup almonds, instead of 2 cups cashews
–1/4 cup dried goji berries
Preparation
1. Process cashews in food processor until they are well ground, (stop before they turn to butter). Add dates and process until the mixture sticks in a large ball.
2. Here’s where you can get creative and add some optional ingredients from the list, and mix again to combine.
3. Line an 8×12 baking dish with wax paper or parchment, and press dough firmly and evenly. Refrigerate for about 30 min to an hour.
4. Remove from fridge, and cut into bars, or roll into balls ( a discovery I made when my bars kept getting messed up)
5. Store in the fridge in a glass container.
You can also freeze these.

These look great! I made something similiar back in the winter, unfortunately my teenage girls liked the taste but thought they looked horrible!

I can’t wait to try these. I’ve been looking for a homemade snack bar option. I’m not a fan of dates – I tried Lara bars and didn’t like them. I might find something to replace the dates. Thanks Holli.

I made these last night and they taste great! Just like the LaraBars I have purchased before. Although, it was really hard to get them to stay together (they were pretty crumbly). I rolled half into balls, but they are still a bit crumbly. What should I do to make them stick together better? More dates and less nuts? Thanks for the recipe!

Try to find really fresh medjool dates, that are large. If not, use more dates until you get a really firm and gooey texture.
When you pat them down, and refrigerate them, they’ll stick. 🙂 Good luck and let us know how you do!

Thanks for the suggestion. I haven’t tried that yet, although just now I did try the recipe again, but with peanuts. Not such a great idea. The peanuts are too heavy, or maybe I just blended them too much. Oh well, there’s always next time!
