Fresh peach Bellini’s
Have you been to Harry Cipriani’s in Venice? They invented this cocktail called the Bellini, a mixture of fresh, local Italian peach nectar and sparkling Italian wine (you can find Cipriani’s in NYC too).
A couple of years ago, I invented my own version of Harry’s drink, using Virginia peaches, and local farm honey. I blended it in my Vitamix and added a little bit to the bottom of a champagne flute, it was the perfect beginning to a party on the back porch.
Ingredients:
3 fresh peaches, pitted and peeled
3 tablespoons raw organic honey
Flute of champagne
Preparation:
1. Blend peaches and honey in your blender
2. Add a tablespoon to a glass of sparkling wine or champagne, and gently add wine to the glass.
