“Girls Gone Healthy” Cauliflower Hummus
I hosted a “Girls Gone Healthy” event at a friends home last night, and it was so much fun.. What a smart, savvy and attractive group of women, thank you!
Here’s a copy of one of the recipes I shared..
Cauliflower Hummus (or as I like to call it)
“Stay Skinny Hummus“
Ingredients
1 small head of cauliflower, chop into big pieces
1 or 2 cloves garlic peeled
15 oz or so chickpeas cooked
1 and 1/2 tablespoon tahini
1 Tbsp olive oil
1/4 cup chopped scallions
1/4 cup parsley
2 teaspoon cumin
1/4 tsp paprika
3 tablespoon lemon juice
1/8 or so water from cooked chickpeas ( or just plain water)
Boil cauliflower in water for 15 min or until soft
Drain and add with the rest of ingredients to food processor
Puree until smooth
Served chilled with sliced veggies or a healthy cracker of your choice
(Nutrition Stylists tip: omit parsley and serve warm for a wonderful side dish)

Hi Stefani,
Check out the Zucchini Hummus instead, no chickpeas! Just substitute the cauliflower if you like!
