Healthy Egg Nog
I’m crazy for egg nog, especially around the holidays. I own a huge silver eggnog bowl with matching cups that I found at an antique store years ago, that’s how much I love the stuff. We pull it out each year for Christmas Eve.
Unfortunately, the dairy version doesn’t love me back, and when I drink it I get symptoms like bloating, stomach pains, and other digestive issues.
The good news is that most grocery stores now features non-dairy versions made with soy, almond milk, or coconut milk, and they’re pretty good. The thing is most of them contain ingredients like carrageenan that I don’t recommend. (for more on that go here)
I decided to create my own healthy version, using almond milk and sweet spices that offer other benefits too.
I think it’s awesome, and the kids agree.
Ingredients
2 cups almond milk (homemade is best!)
1 frozen banana ( you can add a second one if you’re OK with the extra banana sugar)
1 teaspoon vanilla
Big dashes of cinnamon and nutmeg, including some to garnish
3 Medjool dates, pitted
Preparation
Blend in a high speed blender and serve with a cinnamon stick. Sprinkle with a cinnamon shake!
