Summers are busy! Need an easy, quick meal for the family?

 
Here are 4 EASY meals to boost your kid’s nutrition after their active summer days…

 

1) Pasta Night-  in sliced zucchini to a jar of delicious organic tomato sauce (love Seeds of Change brand) gives it a “meaty” bite. Serve with whole grain pasta.

 

2) Mystery Burgers– Middleburg Polo Academy for Kids has been doing this for years in their Summer Camps. ( www.middleburgpoloacademy.org)  Add in thinly sliced kale to your ground meat- grill or broil. Don’t ask, don’t tell. Shhh.

 

3) Mexican Night– Upgrade your taco drive- through habit at home. For the super easy version use (all organic please) taco shells, Eden brand rice and beans or refried beans, ( BPA free cans) Wholly Guacomole brand guacomole, salsa, your own shredded lettuce, and top with shredded cheddar. Fine ingredients make all the difference.

 

4) Pizza Salad– Last nights innovation- Seeds of Change “Tomato Vinaigrette” on top romaine lettuce, add shredded mozzarella and a touch of oregano.. Tell the kids it’s a pizza salad, they love it!
