Guest Blogger: Sarma Melngailis Sesame-Vegetable Noodles with Herbs

Sarma Melngailis is the owner of one of my FAVORITE restaurants in New York City, Pure Food and Wine, and take-a-way’s, One Lucky Duck. She’s the author of two best selling raw food cook books; Raw Food, Real World and Living Raw Food.

Sarma’s restaurants and books are worth knowing and visiting. She’s a leading lady in the raw food and nutrition movement, and I’m thrilled to have her as a guest blogger.

Sarma chose to share her Sesame-Vegetable Noodles. Here is a tip from her about creating this dish:

“With a spiral vegetable slicer (like this) it’s incredibly fun to make these noodles from healthy vegetables, and you won’t feel weighed down the way you would with a traditional noodle dish. This is also an easy recipe to make in bulk and you can vary it however you like. I love cilantro and always add a ton of fresh cilantro leaves when I make it, along with some thai basil if I have it available.”

Preparation
1. In a large bowl, whisk together the tahini, sesame oil, lemon juice, miso, and 1/2 cup of the water.

Add the remaining water a little bit at a time, while whisking until smooth.

2. In a large bowl, toss all prepared vegetables with the sesame dressing until evenly coated.

Season to taste with sea salt

Note from HT: use a mandolin slicer or a spiral vegetable slicer to prepare the vegetables. If you don’t have either, use your prep-chef skills and cut vegetables into skinny strips. You can do this!
