Butternut Squash Soup
This seasonal, warming soup is a personal favorite. It’s loaded with vitamins and minerals and skin-loving beta carotene. The autumn spices warm and rev you up and keep your system going on brisk autumn days.
1. Remove skin and seeds from squash and cut into chunks.
2. If dates are very dry, soak until soft.
3. Add all ingredients to high-speed blender and blend on high until very warm, about 5 min or so.
4. If you do not have a high speed blender, add all ingredients to a soup pot and simmer until soft, then add to your kitchen blender.
5. Taste and adjust seasoning and sweetener.
