Sweet Potato Mash
Why wait for Thanksgiving to enjoy sweet potatoes?
This healthy version of your favorite November treat can satisfy you and your family year round. Rich in Vitamin A, B vitamins and minerals, sweet potatoes can be a high fiber side dish or meal. (I’ve been known to have this for breakfast)
I add maple syrup only when I feel like giving my son a treat.. this recipe is sweet and flavorful enough without it. But maple syrup offers some minerals and B Vitamins that you might want right now.
Ginger and cinnamon are anti-inflammatory spices, a great way to stay healthy as the months get colder.
Ingredients
3 medium sweet potatoes (about 1 1/2 pounds)
3/4 cup coconut milk
1 tablespoon fresh ginger-minced
1/2 teaspoon salt
1 teaspoon cinnamon
1 tablespoon maple syrup
Preparation
1. Pre-heat oven to 425 degrees. Place clean sweet potatoes in oven and bake for 45 minutes.
2. Remove potatoes from oven when soft enough to be pierced with a fork, and allow to cool.
3. Peel potatoes (skin should come off quite easily), and place in large bowl, discard skins.
4. Mash thoroughly with large fork.
5. Add all remaining ingredient and blend to desired consistency.
