Pineapple-Cucumber Gazpacho

This gazpacho is detoxifying and delicious. Pineapple is high in Vitamin C, essential to our immunity, and bromelaine, a group of enzymes known to reduce swelling and healing time after surgeries, and reduce inflammation.

This is one of my most popular recipes, and it’s super easy to make.

Pineapple-Cucumber Gazpacho

4 cups fresh pineapple, cut into pieces

4 cups cucumber, cut into pieces

5 scallions

2 tablespoon lime juice

2 teaspoon celtic salt

1 handful cilantro

3 tablespoon avocado oil

1 1/2 cup raw almonds-ground

Add all above ingredients to high speed blender and blend.

(Be sure to grind the almonds first.)

Garnish with cilantro, and drizzle with avocado oil to serve.
