Watermelon and Dragon Fruit Salad with Mint
The other day I noticed dragon fruit cut into cubes in the cooler at my local store.
If you haven’t tried it, dragon fruit is similar to kiwi in taste, with tiny seeds that give it a polka-dot appearance.
Needing to bring a dish to a friends cookout, I thought how pretty those black and white cubes would look in contrast to hot pink watermelon and leafy green mint. Once a fashionista, always a fashionista, right?
So here’s a basic watermelon salad with the added cuteness of dragon fruit.
Ingredients:
1 small seedless watermelon (about 10 cups fruit cubed)
2 dragon fruits, peeled and cubed
1/4 cup extra virgin olive oil
Juice of approximately 3 limes
1/2 tsp sea salt to taste
1/2 tsp black pepper
1 bunch mint leaves, chopped
1 cup crumbled fresh feta cheese
Preparation:
1. Chill fruits ahead of time. Peel and cube both watermelon and dragon fruit and drain if needed.
2. Using a whisk, blend oil, limes and seasoning.
3. Add fruit to large bowl, and drizzle dressing overtop. Toss gently.
4. Sprinkle mint and feta on top. Serve immediately.
